Vegan palak paneer with soy-free, dairy-free paneer

Say hello to veganised palak paneer! Yup, you read that right! There's NO tofu! That's why you'll never want to say goodbye to this recipe.

Don't worry, it's not that different from dairy, you just need to use the right substitutes. That's why this recipe should be one of the first dishes you make if you are transitioning into a plant-based diet. It's so easy and comforting!

What is vegan paneer?

One Good Paneer is one of the only soy-free vegan paneers in India, and it tastes incredibly delicious while adding essential nutrition in this dish.

The ingredients in our product are simple: almonds, cashews, sunflower oil, water, carrageenan (natural red seaweed extract), guar gum, salt, and citric acid.

You can expect it to be just as firm, creamy, and mild tasting, but the best thing about this recipe is that it's 100% guilt-free!

Ingredients:

  • One bunch of spinach, about 250 grams
  • Ice bath (half water + half ice)
  • One Good butter, 2 tablespoons
  • Cumin seeds, ½ teaspoon
  • Cinnamon stick, 1 small
  • Bayleaf, one piece
  • Ginger garlic paste, 2 teaspoons
  • Red chilli powder, ½ teaspoon
  • Salt, to taste
  • Garam masala, 1 teaspoon
  • One Good paneer, one packet
  • Fresh ginger, for garnish

Procedure:

  1. Cut spinach and wash it thoroughly
  2. In a pot, bring water to a boil
  3. To make an ice bath, fill a bowl with water and add some ice. The mixture should be 50% water and 50% ice. Keep it to the side
  4. Add the spinach in boiling water and for 20-25 seconds. Take it out immediately and put it into the ice bath to stop the cooking and preserve the green color
  5. Once the spinach is cold, strain and remove as much excess water as possible. Then, add it to a food processor or blender to make a puree. Add water if needed.
  6. In a cooking pan, heat One Good butter. Add cumin seeds, a cinnamon stick, and a bayleaf. Cook until the cumin seeds start to crackle
  7. Add ginger garlic paste and cook for a minute
  8. Add red chili powder, salt, and garam masala. Cook for another minute
  9. Add the spinach puree and mix well. Cook on medium heat for 15 minutes, stirring occasionally
  10. Cut one pack of One Good paneer into large dices
  11. Shallow fry the paneer dices on each side for about 1-2 minutes, or until it lightly browns
  12. Adjust the seasoning of your gravy, and add the cooked paneer pieces and place on a serving dish
  13. Garnish with some One Good butter and thinly sliced ginger strips
